Vintage Taco Salad, sometimes you just don't mess with perfection...

Do y'all make Taco Salad, the one that's been around forever that's made with Doritos and Catalina Dressing?  If you haven't made it, You've probably had it at your mom's house or at a potluck or picnic. Maybe you've eaten it and forgotten just how good it is.   I've been making this salad since the 80's, and it's still one of my most requested recipes.  Hubby would happily eat this multiple times a week, he enjoys it that much. 

A lot of people add taco seasoned ground beef to their Taco Salad, we never do, but we do serve it with grilled burgers.  It's just soul soothing, yummy goodness, period!

This is so easy, it goes together in no time.  Here's how you do it.

1 can of light red kidney beans, rinsed and drained
1 chopped onion, green onion is awesome in this salad
iceberg lettuce, shredded
sliced cherry or grape tomatoes
Handfuls of grated cheddar cheese
Handfuls of Nacho Doritos that you crush lightly with your hands.
Catalina Dressing

Put everything in a large salad bowl, ending with the Doritos, toss at last minute with the chips and serve.

Now wasn't that easy?  It's not really a recipe, you just throw in what you like.  You can use any kind of  chip with this, Mexican corn chips, Fritos, etc. but the Doritos really are the best, because they have that great tangy, cheesy taste.

If you want to add seasoned and cooked ground beef, go for it and top it with a big dollop of sour cream.  You want corn in it?  That works, too.

So many possibilities with this, and you just can't go wrong, it's so good.

Note:  I put the beans in the fridge overnight, and then drain and rinse at the last minute so they are cold.

Old Fashioned Chicken Salad

Mother made old fashioned chicken salad with ingredients she had in her fridge.  This doesn't have fruit or sour cream or nuts, like a lot of chicken salads today, it's just a basic old fashioned chicken salad and it's so good.

 She always ground her chicken salad with a food grinder, I prefer just chunking it.

There isn't an exact recipe, you just adjust ingredients as you go along.

Cooked chicken breast
Hard Boiled Eggs
Chopped Green Onions
Diced Celery
Celery Seed
Pimentos (Mother didn't add pimentos, but my friend Jean does, and it's a nice touch)
Sweet pickle relish
Mayonnaise
Pepper 

Just blend ingredients, adding enough Mayo to make it creamy, chill and enjoy.  It's wonderful, great made with turkey, too...
 

Super Bowl Taco Salad

Ingredients

  • 1 15-ounce can black beans, rinsed and drained
  • 4 cups shredded iceberg lettuce
  • 1 medium tomato, seeded and chopped
  • 1-1/2 cups shredded cheddar or Monterey Jack cheese
  • 1/4 cup sliced pitted ripe olives
  • 1/4 cup sliced green onion
  • 1 6-ounce carton frozen avocado dip, thawed
  • 1/2 cup dairy sour cream
  • 1 4-ounce can chopped green chili peppers, drained
  • 1 tablespoon milk
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • Chopped tomato (optional)
  • 2 cups coarsely crushed tortilla chips
Directions

1. In a 2-1/2-quart glass salad bowl layer black beans, lettuce, tomato, cheese, olives, and onion.

2. For dressing, in a medium bowl stir together avocado dip, sour cream, chili peppers, milk, garlic, and chili powder. Spread over the top of the salad. If desired, sprinkle with chopped tomato. Cover the surface with plastic wrap and chill for at least 2 hours or up to 24 hours.

3. Before serving, toss salad together and serve over crushed tortilla chips. Makes 4 servings.
